The purpose of this study was to evaluate the impact of the level of boiled ginger water (zingiber officinale var. amarum) on the body weight and carcass weight of broiler chickens. This study was conducted from the end of February to the end of March 2025 at a chicken farm owned by the Sion Women's Farmers Group, located in Sasi Kefamenanu Village, Kefamenanu City District, North Central Timor Regency. In this study, 96 broiler chickens were used, ranging in age from 0 to 6 weeks. The method used was a completely randomized design (CRD). The chickens were randomly divided into 4 treatment groups, each replicated 4 times, with each replicate consisting of 6 chickens. The treatments given were P0 (1000 ml drinking water), P1 (950 ml drinking water + 50 ml boiled ginger water), P2 (900 ml drinking water + 100 ml boiled ginger water), and P3 (850 ml drinking water + 150 ml boiled ginger water). The variables studied included live weight, carcass weight, carcass percentage, breast weight, percentage of breast weight, thigh weight, percentage of thigh weight, and breast meat thickness. For data analysis, analysis of variance (ANOVA) and Duncan's multiple range test were used. The results of this study showed that the live weight for P0, P1, P2, and P3 were respectively1780.00±95.52, 1813.75±117.60, 1815.00±60.42, and 1856.25±116.85g/head respectively. Carcass weight was 1288.75±118.09, 1311.75±17.65, 1319.50±57.57, and 1409.00±96.99g/head, respectively. The percentage of carcass weight was 72.27±2.99, 72.67±5.39, 72.74±3.20, and 75.90±2.82, %/head, respectively. Chest weight was 473.25±31.99, 524.75±14.92, 572.75±18.16, and 611.50±23.31 g/head, respectively. Percentage of chest weight was 36.92±3.19, 40.00±0.73, 43.44±,1.06 and 43.52±1.97 %/head, respectively. Thigh weight was 418.75±45.71, 433.75±28.39, 436.75±21.66 and 452.25±51.79 g/head. The thigh weight percentage was 33.03±6.16, 33.07±2.10, 33.12±1.53 and 33.16±1.89%/head, respectively. The thickness of the breast meat was 2.80±0.27, 2.93±0.35, 3.16±0.59 and 3.95±0.57mm/head, respectively. Statistical analysis showed that the treatment had a significant impact (P<0.05) on breast weight, breast percentage, and breast meat thickness of broiler chickens, while live weight, carcass weight, carcass percentage, thigh weight, and thigh percentage were not affected. It was concluded that giving boiled ginger water 850 ml of drinking water + 150 ml boiled emprit ginger water can provide the best results on live weight, carcass weight, carcass percentage, breast weight, breast percentage, thigh weight, thigh weight percentage and breast meat thickness of broiler chickens.
